I am the soup queen!
Wow go me – 2 posts in the same week….impressed much? 😉
Since the bad weather has made us all cold and yucky I have taken to making a shit load of soup.
My latest is a Beef soup. And so far it seems to be the one that we love the most as is so easy to make.
I am going to share the recipe with you guys so you can enjoy it as much as we do lol
Ingredients:
- knob of butter
- 1 onion chopped
- 250g of diced beef
- 500g pack of diced carrot and swede
- 100g pearl barley
- 4 beef stock cubes
Method:
- Fill your kettle up and stick it on to boil.
- Add the butter and chopped onion to your soup pan and stir until the butter has melted, then add in the diced beef and brown for 3 to 4 mins.
- Add in carrots/swede and pearl barley and give it a stir.
- By now kettle should have boiled so add water to the pan then crumble in the stock cubes.
- Give it a good stir for a few mins to allow the stock cubes to dissolve.
- Bring to the boil then allow to simmer for 1 hour.
Really simple and tastes delicious – I haven’t added about putting salt and pepper in as the stock cubes give it all the seasoning it needs but feel free to add as desired =) I know everyone has different tastes.
